Meet Chef Victor Guzman

A Passion Forged in the Family Bakery

Victor Paul Guzman was born in the Dominican Republic, where he grew up watching his father craft bread and pastries in the family bakery. From his earliest years, the warmth of the oven and the alchemy of flour, butter and sugar were as natural to him as breathing.

After decades of international experience — from the grand dining rooms of cruise liners to the refined kitchens of fine dining restaurants — Victor developed a mastery of chocolate work, French patisserie, and Italian gelato that few chefs in the UK can match. His time in Italy, and the influence of his Italian wife, instilled in him an uncompromising approach to coffee and gelato that remains central to everything Victor's creates.

As Head Chef of Pastry at Gran Caffe Liverpool, Victor became a respected figure in the city's culinary scene. But his dream was always his own establishment — a place where he could share his passion directly with the community he calls home.

That dream became Victor's Sweet Delights in Waterloo, which sells out every single day. Now, with the opening of Victor's Patisserie & Gelato at The Arcade, Water Street, Victor brings his celebrated craft to the heart of Liverpool city centre.

The Victor's Timeline

1975

Born in the Dominican Republic

Victor Paul Guzman is born into a family of bakers. His father's bakery becomes his first classroom, where he learns the fundamentals of bread and pastry from an early age.

1990s

International Career Begins

Victor hones his craft across cruise lines, fine dining establishments, and international kitchens — specialising in chocolate work and fine patisserie. His time in Italy shapes his gelato philosophy and coffee standards.

2000s

Head Chef of Pastry, Liverpool

Victor takes the prestigious role of Head Chef of Pastry at P&D (now Gran Caffe), one of Liverpool's most respected establishments, cementing his reputation in the city.

2024

Victor's Sweet Delights Opens

Victor realises his lifelong dream, opening his own bakery at 101 South Road, Waterloo, Liverpool. The response is immediate — the shop sells out every single day, with queues forming outside.

2026

Victor's Patisserie & Gelato — City Centre

Following overwhelming demand and recognition in the Liverpool Echo and Explore Liverpool, Victor opens his flagship city centre location at The Arcade, Water Street — bringing his celebrated craft to the heart of Liverpool.
